I have a problem where I need to know how many grams are in a 12 ounce coconut.
Do I use "dry measure" with figuring out how many grams are in a ounce? And is that
about 28 grams? Thanks.

Since you have the weight of a coconut you have ounces as a weight measure rather than ounces as a volume measure so you are correct, use dry measure ounces. There are 28.350 grams (approx.) in one ounce so the weight of a 12 ounce coconut is 12 x 28.350 = 340.2 grams.
